  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter (for toffee sauce)
  • 1/2 cup brown sugar (for toffee sauce)
  • 1/2 cup heavy cream (for toffee sauce)
  • 1/2 tsp vanilla extract (for toffee sauce)
  • Pinch of salt (for toffee sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, combine chopped dates with boiling water and baking soda; let sit for about 10 minutes.
  3. Cream together softened butter and brown sugar until fluffy.
  4. Beat in the eggs one at a time along with vanilla extract.
  5. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  6. Gradually add the dry ingredients and the date mixture into the wet ingredients; mix gently.
  7. Fold in chocolate chips until evenly distributed.
  8. Pour batter into the prepared dish and bake for 30–35 minutes or until a toothpick comes out clean.
  9. For the toffee sauce, melt butter in a saucepan over medium heat; add brown sugar and heavy cream, stirring until thickened.
  10. Once baked, poke holes in the pudding and pour half of the warm toffee sauce over it; let soak for about 5–10 minutes before serving.
