  • 280g firm tofu (chopped into small cubes)
  • 1 tbsp cornflour
  • 1/2 tbsp oil
  • 1 aubergine (sliced into small cubes)
  • 2 garlic cloves (minced)
  • 1/2 tbsp fresh grated ginger
  • 2 spring onions (chopped)
  • 1 tbsp sesame oil
  • 3 tbsp sriracha
  • 1 tbsp soy sauce/tamari
  • Juice of 1 lime

Instructions

  1. Toss the tofu cubes in cornflour until evenly coated.
  2. Heat a little oil in a frying pan over medium heat.
  3. Fry the tofu until browned on all sides. Once done, set aside.
  4. In the same frying pan, heat the sesame oil.
  5. Add the aubergine cubes and stir to coat them with oil.
  6. Add 2-4 tablespoons of water to help steam the aubergine as it cooks.
  7. Continue cooking over medium heat until the aubergine softens.
  8. Mix in minced garlic, grated ginger, and chopped spring onions into the pan.
  9. Cook for an additional minute until fragrant.
  10. Pour in sriracha, soy sauce (or tamari), and lime juice; stir well.
  11. Gently fold in the cooked tofu cubes.
  12. Cook for another couple of minutes until everything is heated through.
