  • ¼ tsp ground nutmeg
  • 8 oz white chocolate (melted)

Instructions

  1. In a medium bowl, combine crushed gingersnap cookies, softened cream cheese, molasses, and spices until smooth. Chill if too soft to roll.
  2. Scoop out 1-inch portions and roll into balls. Place on a parchment-lined baking sheet.
  3. Chill truffles for 30 minutes in the fridge or 15 minutes in the freezer until firm.
  4. Melt white chocolate using a double boiler or microwave in short intervals.
  5. Dip each truffle into melted chocolate, letting excess drip off before returning to the tray.
  6. Add optional garnishes immediately after dipping, then refrigerate for another 20 minutes until set.
