  • 1 Cup Pureed Pumpkin

  • 3 tsp. Baking Powder
  • 1 tsp. Xanthan Gum
  • 1 tsp. Pumpkin Pie Spice
  • Dash of Salt
  • 1 tsp. Cinnamon
  • ¼ tsp. Nutmeg
  • 2 Cups Powdered Sugar
  • 1 ½ tsp. Vanilla
  • ½ tsp. Cinnamon
  • ½ TBSP Coconut Milk

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a bowl, whisk eggs, sugars, vanilla extract, pureed pumpkin, and dairy-free milk.
  3. In another bowl, mix flour, baking powder, xanthan gum, spices, and salt.
  4. Gradually combine dry ingredients with wet until just mixed.
  5. Fill each donut cavity three-quarters full and bake for about 20 minutes.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.
  7. For the glaze, mix powdered sugar, vanilla extract, cinnamon, maple extract, and coconut milk until smooth.
  8. Dip cooled donuts in glaze or drizzle on top.
