  • 1 cup orzo pasta
  • ⅓ cup crumbled feta cheese
  • 2 cups chicken broth
  • Juice of 1 lemon
  • Fresh parsley (chopped, for garnish)
  • Extra virgin olive oil
  • Salt (to taste)
  • ¼ cup fresh parsley (chopped)
  • ½ tbsp onion powder (or finely chopped scallion/red onion)
  • ½ tsp freshly cracked pepper
  • ¼ cup finely chopped walnuts or pecans or ⅓ cup almond flour
  • 3 cloves garlic (minced)
  • 1 tsp ground cumin
  • 2 tsp dried oregano or fresh oregano
  • Zest of 1 lemon
  • 2 tsp fresh dill (chopped)
  • ½ tsp salt

Instructions

  1. In a mixing bowl, combine ground chicken, feta cheese, parsley, onion powder, olive oil, pepper, walnuts (or almond flour), garlic, cumin, oregano, lemon zest, dill, and salt until well mixed.
  2. Shape the mixture into 1½ to 2-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat; sear meatballs for 3–4 minutes until browned. Cover and cook for an additional 5–6 minutes until cooked through.
  4. In the same skillet, bring chicken broth to a boil; add orzo and cook for 8–10 minutes until tender.
  5. Stir in lemon juice and olive oil; serve orzo topped with meatballs and garnish with feta cheese and parsley.
