  • 45 fresh ripe peaches, sliced
  • 1/4 cup granulated sugar
  • 2 tbsp brown sugar (optional)
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)
  • 1 tbsp cornstarch or flour
  • 1 pie dough, homemade or store-bought
  • 1 beaten egg (for egg wash)
  • 1 tbsp coarse sugar for sprinkling
  • All-purpose flour for dusting if needed

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out your pie dough into a 12-inch circle on a lightly floured surface and place it carefully on the prepared baking sheet.
  3. In a mixing bowl, toss together the sliced peaches with granulated sugar, brown sugar (if using), lemon juice, vanilla extract, ground cinnamon (if desired), and cornstarch until all slices are well coated.
  4. Arrange the peach mixture in the center of the rolled-out dough, leaving about a 2-inch border around the edges. Fold these edges over the fruit gently to create a rustic look.
  5. Brush the exposed crust with the beaten egg and sprinkle coarse sugar over the top.
  6. Bake your galette in the preheated oven for 35–40 minutes or until the crust turns golden brown and you see bubbly filling around the edges.
  7. Allow your Peach Galette to cool slightly before slicing. Serve warm or at room temperature.
