  • 12 cups ice cubes
  • ¼ cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract
  • ½ tsp maple extract, optional
  • Cold oat milk, to taste

Instructions

  1. In a small saucepan, combine brown sugar, pumpkin puree, and warm water. Simmer on low heat for 2-3 minutes until thickened.
  2. Remove from heat and stir in vanilla extract (and maple extract if desired). Strain to remove spices if preferred.
  3. In a sealable jar, mix one double shot of espresso with 1-2 tablespoons of syrup and ice cubes. Shake vigorously for 20-30 seconds.
  4. Pour the mixture into a glass without ice, then add fresh ice and cold oat milk to your liking. Dust with pumpkin pie spice for garnish.
