  • 170 grams pumpkin puree
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a mixing bowl, beat together the eggs and sugar until fluffy. Add coconut oil, pumpkin puree, vanilla extract, and mix until combined.
  3. In another bowl, combine all dry ingredients. Gradually fold into wet mixture until just combined.
